Ashford Farm Turkeys

We are open for either fresh or frozen produce approximately once or twice a month, usually on a Saturday morning. If you would like to be kept informed of when we are open and what we have to offer please subscribe to our newsletter/e-mails.

We also sell seasoned hardwood logs – either trailer loads delivered to the local area or you can collect from the farm. Similarly, we can supply well-rotted farmyard manure by the trailer load (or massive tractor trailer load for large gardens/allotments!)

Easter Opening Reminder

We will be open for our fresh Easter Produce on Good Friday, 7th April, from 9.30 am – 3 pm & Easter Saturday, 8th April, from 9.30 am – 1 pm.

I’m afraid we do not offer a delivery service – our produce is collection only from the farm.

We know that because of the constant changes to who can gather for Christmas that some may be looking for new ways to use up any leftover turkey!

She publishes new recipes in the equally brilliant and informative NFU Countryside Magazine every month so please do have a look and be inspired. Turkey fricassee

Ingredients

  • 50g butter
  • 1 leek, finely chopped
  • 2 rashers bacon, chopped
  • 100g chestnut mushrooms
  • 1 tbsp plain flour
  • 100ml cider or white wine
  • 200ml chicken or turkey Stock
  • 150ml double cream or crème fraiche
  • 800g leftover cooked turkey, shredded
  • Few chives

Method

  1. Melt the butter in the pan, and fry the leeks, mushrooms and bacon.
  2. Add the flour and cook for about 1 minute.
  3. Gradually add your choice of either cider or white wine and the stock. Bring to the boil and simmer for about 1 minute.
  4. Take off the heat and add the cream, chives and turkey and heat through thoroughly.
  5. Serve with pasta or rice.

Turkeys

At Ashford Farm, all of our poultry is free range. Our turkeys (both bronze and white) come in from a British hatchery as day old chicks in June and are slow growing traditional breeds, often being around double the age of those reared intensively. The fact that they are allowed to mature slowly and have daily access to our fields below the beautiful Ashford Hangers, mean they grow into plump, rounded turkeys with a natural layer of fat, which makes for a flavoursome and tasty final product.

We try and give our turkeys as natural a life as possible so they wander in and out of the barn for food, (which is predominately milled from our own oats and wheat grown in nearby fields) during the day. If you walk down our lane you will see them out in the field but watch out as they can be perched on the fences (a form of turkey oneupmanship!) or found in our yard having a dust bath in the wood shavings!

When the time comes, our turkeys are slaughtered on farm by licensed slaughtermen so that stress is kept to an absolute minimum and, obviously, no travelling is involved. Our birds are dry plucked for a quality finish and hung for a minimum of 7 days to allow the flavour to develop. We provide our turkeys dressed and oven ready in individual boxes with giblets and cooking instructions included.
